It’s Monday! & the last thing I want to worry about is breakfast this AM. So, to get the day off on the right foot, I threw together one of our favorite leftover dishes: EGGS w/ TOSTONES. Now I don’t know about you, but plantains are one of my favorite ingredients in the kitchen because you can have it at any meal.

Breakfast Tostones

Ingredients
  

  • 2 unripe plantains
  • 1/2 cup avocado oil
  • 1 tbsp sea salt

Instructions
 

  • peel the plantains and cut into 1 inch thick slices
  • in a deep frying pan heat the oil and fry the plantains till golden. flatten the plantains using a tostonera OR cover the bottom of a soup can with plastic wrap and smash plantains to 1/4 inch thick.
  • fry the plantains again until golden yellow on both sides. serve immediately, preferably with guacamole. ENJOY!
