Guys, you NEED try these gluten free blueberry bars! The recipe is based off of my blender banana bread and turned out pretty pretty good with blueberries:) It’s also a quick cleanup since you mix all the ingredients in the blender then transfer to a baking dish. The glaze is optional but also necessary if you want this electric purple topping. Check out the recipe below & let me know if you try it out!
Gluten-Free Blueberry Blender Bars
Ingredients
- 3 cups gluten free oats
- 3 bananas
- 1/2 cup almond milk
- 1/4 cup maple syrup
- 2 eggs
- 2 tbsp ghee
- t tsp baking soda
- 1 tsp baking powder
- 1 tbsp cinnamon
- 1 tsp vanilla
- 1/2 tsp salt
- 3/4 cup blueberries frozen
Glaze
- 1/2 cup blueberries frozen
- 1.5 cup icing sugar
- 1 tsp vanilla
- 1/2 tsp lemon juice
- 2 tsp almond milk
Instructions
- Preheat oven to 350° and line a 8x4 inch loaf pan with parchment paper.
- Place the oatmeal + baking soda in the blender and pulse until a flour-like consistency.
- Add the rest of the ingredients to the blender, minus the blueberries, and pulse until completely blended. Stir in the blueberries and transfer mix to the prepared pan.
- Bake for 50 minutes. Test the center of loaf with a toothpick to determine if it needs a few minutes longer in the oven.
- Let loaf cool for 30 minutes the top with blueberry glaze.
