Ingredients & Substitutions

  • Eggs: The star of this recipe. You’ll need 7 eggs. Make sure to check your fridge before getting started!
  • Milk: I used almond milk, but any milk will work here, whether it’s dairy or plant-based.
  • Veggies: I’ve included diced onions, green peppers, and jalapeños for a kick. Feel free to use whatever veggies you like—broccoli, spinach, or mushrooms are great alternatives.
  • Meat: Breakfast sausage is my go-to, but bacon works equally well. Or skip the meat for a vegetarian version.
  • Cheese: Cheddar cheese adds the perfect gooey texture. You can substitute with Monterey Jack or a sharp cheddar for a different flavor profile.
  • Spices: Garlic powder and cumin give this frittata a savory depth. Don’t have cumin? Try chili powder or paprika for a twist.

How to Make Jalapeño Cheddar Frittata

Step 1: Preheat Your Oven

  • Preheat your oven to 350°F (175°C). Lightly grease a baking dish with coconut oil or avocado oil and set it aside.

Step 2: Mix the Eggs

  • In a medium bowl, whisk together the 7 eggs, 1/2 cup of milk, salt, and pepper until well combined.

Step 3: Add the Good Stuff

  • Fold in your diced veggies (onions, peppers, and jalapeños), chopped breakfast sausage, and shredded cheese. Mix until everything is evenly distributed.

Step 4: Bake the Frittata

  • Pour the mixture into your prepared baking dish. Top with additional cheese if you like it extra cheesy. Bake for 25 minutes, or until the frittata is puffed and the center is set (not runny).

Step 5: Serve and Enjoy!

  • Let the frittata cool for a few minutes before slicing and serving. For an extra kick, garnish with sliced jalapeños and serve with sour cream. This frittata also pairs beautifully with a fresh citrus salad or breakfast potatoes!

Tips for Success

  • Don’t Overbake: Keep an eye on the frittata while it’s in the oven. The eggs should be set, but not dry. If the center is still jiggly, give it a few more minutes.
  • Pre-Cook Veggies and Meat: Ensure that all vegetables and meats are cooked before adding them to the egg mixture. This prevents excess moisture and ensures even cooking.
  • Store Leftovers: Refrigerate leftovers in an airtight container for up to a week. You can also freeze the frittata in a freezer-safe container for up to 2 months. Reheat in the oven or microwave before serving.

What to Serve with the Jalapeño Cheddar Frittata

This jalapeño cheddar frittata is delicious on its own, but it pairs perfectly with:

  • Citrus side salad: The freshness of citrus balances the richness of the frittata.
  • Breakfast potatoes: Crispy potatoes make for a hearty side dish.
