Gluten-Free Blueberry Blender Bars

Ingredients
  

  • 3 cups gluten free oats
  • 3 bananas
  • 1/2 cup almond milk
  • 1/4 cup maple syrup
  • 2 eggs
  • 2 tbsp ghee
  • t tsp baking soda
  • 1 tsp baking powder
  • 1 tbsp cinnamon
  • 1 tsp vanilla
  • 1/2 tsp salt
  • 3/4 cup blueberries frozen

Glaze

  • 1/2 cup blueberries frozen
  • 1.5 cup icing sugar
  • 1 tsp vanilla
  • 1/2 tsp lemon juice
  • 2 tsp almond milk

Instructions
 

  • Preheat oven to 350° and line a 8x4 inch loaf pan with parchment paper.
  • Place the oatmeal + baking soda in the blender and pulse until a flour-like consistency.
  • Add the rest of the ingredients to the blender, minus the blueberries, and pulse until completely blended. Stir in the blueberries and transfer mix to the prepared pan.
  • Bake for 50 minutes. Test the center of loaf with a toothpick to determine if it needs a few minutes longer in the oven.
  • Let loaf cool for 30 minutes the top with blueberry glaze.
