Preheat oven to 425° and prepare a lined baking sheet with parchment paper.
Mix the sugar, apples, butter & spices in a small bowl and set aside.
Take the sheet of puff pastry and cut into small rectangle shapes.

Place cutout pastry dough shapes on the prepared baking sheet & use a fork to lightly poke holes in each shape. Top each with the apple mixture & brush edges with extra butter.
